Aemono translated into Polish means 'dressed dish'. They are often made with fresh seasonal vegetables such as green beans, cucumber, yams and spinach, which are cut into pieces and then boiled or fried. They are sometimes served with sashimi, seasoned with various condiments - vinegar, miso, soy sauce, tofu or sesame seeds. Aemono can refer to both fresh seasonal vegetables and salads prepared with a dressing based on them. Aemono is distinguished by noting the sauce with which the dish has been seasoned (e.g. goma-ae is vegetables in sesame seeds, where goma means just sesame seeds). Aemono can also be used as a thick sauce to coat dishes, which is most often made with a tofu puree base. It differs from the similarly named sunomono in that aemono is served with a thick dressing, while sunomono is served with a light, flowing sauce.
