Teriyaki
Teriyaki involves roasting or grilling meat and fish using a tare marinade. Soy sauce, honey, sake and sugar are used to prepare the marinade. The culinary art of teriyaki is derived from the word teru meaning 'shining'. It is the tare marinade, or more precisely the sugar in it, that is responsible for the shine of the dish. By far the most popular is teriyaki chicken, which is made with chicken shanks marinated in tare. Sesame, chilli and onions are added to the dish. Beef and salmon teriyaki are also enjoyed in Japan. Whether you choose meat or fish, the dish should shine and be properly marinated. It is also good to compose it with spicy side dishes, such as a spicy salad or pickled vegetables.
