Dorayaki are Japanese sweet pancakes. They are similar in size to Polish racuchi. The double-folded pancakes are served with anko paste based on beans, sugar and salt. Pumpkin, apricots, jam or peanut butter sometimes appear instead of beans. The pancakes should be about the size of the palm of your hand and shaped like a circle. One pancake is covered with a thick layer of bean filling. It is then covered with a second pancake, creating a kind of sweet sandwich. It is worth adding that the pancake batter should be quite fluffy and the consistency should resemble a sponge cake. Dorayaki is great for breakfast or afternoon tea. Interestingly, sweet pancakes are sometimes referred to in Japan as mikasa. This name can be encountered in Nara and Osaka, among other places.
