Uramaki

Uramaki is a type of sushi that is often referred to as an 'inside-out roll'. The distinctive feature of uramaki is that the rice is on the outside of the roll and the nori (dried seaweed) sheet is on the inside. The stuffing usually consists of two or three different ingredients, and the rice is often topped with toppings such as masago, tobiko or sesame. Uramaki is an example of the adaptation of sushi to Western consumer tastes and is popular in many sushi restaurants around the world. They are usually served with a little wasabi, soy sauce and slices of pickled ginger. Uramaki is often decorated and further flavoured by sprinkling various toppings on the outside of the rice, such as tobiko (fish roe), masago (chapan roe) or sesame. The history of this type of sushi dates back to the 1970s, when Hidekazu Tojo, a Japanese man working in Vancouver, Canada, created the first such roll - the California Roll.
