Sencha is a popular type of Japanese green tea, known for its refreshing slightly grassy flavour. The infusion is often served with sushi. It is characterised by its intense green colour and distinctive aroma, which is often described as reminiscent of seaweed or vegetation. Sencha tea differs from other green teas, particularly Chinese teas, in the way it is processed. The tea leaves are treated with steam, rather than roasted or oven-dried, as in the Chinese method. The way in which traditional sencha tea is brewed is subject to a detailed procedure and differs from typical green tea brewing. A dedicated tea set is recommended and the brewing process itself involves several steps, such as heating the pot, adding the tea leaves and steeping briefly. Sencha is an important part of Japanese tea culture. It is also known for its health-promoting properties: it is rich in amino acids, polyphenols and vitamin E, supports the maintenance of normal blood pressure, has a soothing effect on the digestive system and has a gentle calming effect.
