Okonomiyaki Literally translated, it means 'fry what you like'. It is one of the most popular dishes in Japan and consists of Chinese cabbage, wheat and potato flour, shrimp or fish meat, dried seaweed and dashi broth. Okonomiyaki is usually seasoned with a special sauce dedicated to this dish and soy sauce. The dish is served in the form of thin pancakes about the size of the palm of the hand. If it is larger, it is sometimes called "Japanese pizza". An exemplary dish should have thin slices of bacon and a sprinkling of dried shrimp or katsuobushi. Okonomiyaki is always served topped with plenty of mayonnaise and a sauce based on soy sauce, ketchup, Worcestershire sauce, vinegar, sugar and ginger juice. The classic dish is also served with a fried egg, which adds to the nutritional value of okonomiyaki.
