Black sesame is a variety of sesame seed derived from the Sesamum indicum plant. It is characterised by its dark - almost black - skin. In taste, it is similar to its lighter counterparts, but has a slightly more intense and nutty aroma. Black sesame is valued both for its nutritional properties and for its culinary uses. It is a source of protein, fibre, healthy fats, calcium, magnesium, iron and various vitamins and minerals. Traditional Asian medicine also attributes it with properties that support skin, hair and bone health. Black sesame is often used in Asian cuisine, especially in Japanese, Korean and Chinese dishes: as an ingredient in sauces, dressings or as a sprinkling on sushi, salads and meats. It is also used to garnish dishes. A popular practice is to roast black sesame, which releases the oils from it, bringing out the full flavour and aroma.
