Honetsuki-dori is a simple dish in the form of chicken thighs. In Japanese restaurants serving this dish, we have a choice of hinadori (meat from a young chicken) or oyadori (meat from an adult chicken). Juicy on the inside with a crispy skin on the outside, the meat has been popular in Japan for years, especially in Kagawa Prefecture.
Chicken thighs stand out not only for their juiciness and crispness, but also for the wonderful aroma of the added garlic. The meat is seasoned with plenty of salt and pepper and sometimes a pinch of ginger. Grilling the thighs slowly over the fire, basting them with fat from time to time, enhances the meat's unique flavour. Chicken is usually served with coarsely chopped cabbage.
