Chirashi
Chirashi, or rather chirashi-zushi is what is known as dispersed sushi. The individual elements of the famous dish have been re-arranged and served in a separated form. Chirashi-zushi is served in a bowl with rice and arranged ingredients such as seafood, gyutataki fillet, shiitake mushrooms or tofu. Short-grain, sticky rice - the kind used for classic sushi - works best for the dish. It is also important to add vinegar, without which it is hard to imagine chirashi. In Japan, the most popular types of the dish are bara-zushi (Okayama prefecture) and sake-zushi (Kagoshima prefecture). In some regions, fruit is also added to the dish.
