Sansho
Sansho

Sansho is an extremely aromatic spice from Japan in the form of red berries. These berries come from the yellow pepper tree, a small tree grown mainly in the central part of the island of Honsiu in Wakayama Prefecture. Since 1880, the sansho spice has been produced mainly by the Kaneihi family company. The family's crop is considered the best in all of Japan. Sansho is often found in shops under the name 'mountain pepper from Japan' or simply 'Japanese pepper'. It is not, however, a pepper as we know it in Polish cuisine, because it belongs to the rutaceae family - the same family where... citrus fruit comes from. In traditional Japanese cuisine, sansho is used to marinate raw fish, among other things. The freshly ground spice wonderfully enhances the flavour of hot fish. Due to its peppery and floral accent, the spice goes well with meats such as beef. Sansho is also used to season aemono (fresh seasonal vegetables), suimono soup or tsukemono (pickled vegetables).
