Unagi sauce
Unagi sauce is a sweet and thick sauce used mainly in Japanese cuisine, especially in eel dishes. It is the key ingredient that gives a distinctive flavour to grilled eel. It is also used as a dip for sushi and sahimi and as a side dish for unadon (a bowl of rice with eel). It is perfect for marinating meats and tofu. The sauce's rich sweet and salty flavour enriches the qualities of many Japanese dishes. The sauce is a blend of several ingredients, such as soy sauce (provides depth of flavour and saltiness), sugar (adds sweetness), sweet mirin rice wine and sake. It has a smooth pleasant texture.
