Thanks to methods developed for preserving fish by fermenting rice, it was possible to keep it for a long time. Over time, the technique evolved and became a culinary art in Japan. Sashimi is a dish that originated later than rice rolls - only when Japanese chefs began to appreciate fresh raw fish.
