Some, however, prefer to eat it in the comfort of their own home. How long can sushi be kept in the fridge? Can sushi be eaten the next day? Check out the most important information on storing the famous dish from Japan.
Premium versus store-bought sushi - what's the difference?
Sushi is a dish that is a combination of cooked rice seasoned with rice vinegar and fish, seafood, vegetables, tofu and eggs, among others. The most popular rolls are rolled in dried seaweed (nori). Equally popular are nigiri (rice covered with a slice of salmon, for example) and sashimi (a raw slice of fish - no rice). These Japanese dishes are served with accompaniments such as soy sauce, wasabi and pickled ginger.
Sushi restaurant At first glance, it prepares rolls similar to those in the shops. However, there are quite a few differences between them affecting taste, quality and texture:
- In restaurants, the dish is cooked on the fly, which ensures top quality and freshness. In the shop, the cut rolls are packaged and transported, which can affect its taste.
- The restaurant is staffed by sushi masters who spend years learning the techniques of cutting, composing and arranging the rolls. Store-bought dishes are mass-produced, which often means lower precision in execution.
- Sushi rice In the restaurant, it usually has the perfect consistency - it is slightly sticky and perfectly seasoned. In the shop it tends to be harder and without the right seasoning.
- The restaurant uses, among other things, high-quality fish. In shop rolls, on the other hand, less exquisite ingredients are often found.
- Sushi masters serve the dish immediately after preparation so that it retains the right texture and temperature. In the shops, the dish often spends many hours (or, horror of horrors, even days!) in the cold room or fridge, which reduces its quality.
How long can sushi be kept in the fridge?
A dish prepared with fresh ingredients should be eaten immediately after serving. But what if the portion you ordered is too large or you bought the dish from the market? Then it is crucial to get it right storage of sushi. The fresh fish and seafood dish is particularly sensitive to temperature fluctuations, so it should be quickly placed in the fridge.
Optimum holding time sushi in the fridge is a maximum of 24 hours. This time applies mainly to dishes with raw fish. Longer storage may result in bacterial growth and this will certainly affect the taste, texture and safety of consumption.
How to keep them in fridge?
- Packaging - Make sure the dish is sealed tightly. You can wrap the rolls in cling film or store them in an airtight container.
- Temperature - The dish should be stored at a temperature between 0 and 5 degrees C.
- Insulation - do not keep it with food with a strong smell, as fish and rice can absorb it.
Is it possible to eat sushi on the second day?
Eating sushi the other day is only possible when observing the rules for proper storage of the food. However, the taste and texture on the second day can change significantly. The rice may become dry and hard, and the fish less fresh and intense in flavour. Nori, on the other hand, will soften and become rubbery.
The original raw fish rolls should be eaten immediately after cooking. Our specialists in Japanese rolls with Susi Zushi do not recommend eating the dish the next day. If you prepare it yourself and use smoked fish, for example, you can put the excess dish in the fridge for up to 18 hours. However, you have to reckon with the fact that every ingredient will deteriorate.
Can sushi be frozen?
Well, this is a highly controversial issue. Poorly stored raw fish can lead to food poisoning. This is why it is so important to follow basic hygiene rules when preparing a Japanese delicacy.
Sushi should be consumed no more than 2-3 hours after preparation - this is when it will be at its tastiest and healthiest. Ideally, only rolls made from partially processed fish should be kept in the fridge.
Frozen sushi is not recommended also because the fish used in it has in all probability already been subjected to this process once. In places far from the sea, raw and fresh fish is hard to come by, so they are frozen at -20 degrees C for at least 24 hours. This eliminates parasites and inhibits bacterial growth.
It is also not advisable to freeze rice, as this process kills its properties. It is better to cook it fresh in the quantity we actually need. Freezing only makes sense if you want to avoid waste. However, the sushi will then lose its quality - the health and taste qualities will simply... disappear.
This is worth remembering!
Freezing or refrigeration will always reduce the nutritional value of the dish. That's why it's best to eat the rolls right after preparing them at home. Alternatively, you may be tempted to feast at a reputable restaurant serving the famous Japanese dish.
